Ingredients:
4 Eggs
4 Tomato
1 Onion
Chopped Parsley
Fat
Salt and Pepper to taste
Method:
Blanch tomatoes. Cut into halves, remove seeds adn chop roughly. Chop onion heat fat saute onion without discolouration. Add tomatoes. Simmer gently till all moisture is evaporated. Prepare omelet as for basic recipe. Fill with prepared tomato. Fold. Place on a hot plate, sprinkle top with chopped parsely and serve at once with tomato sauce.
