Sukhi Gobi or Spiced Cauliflower

Ingredients:

1 Cauliflower
1 Onion
1 Piece Ginger
100 ml Curds
1/4 tsp Coriander Powder
1/4 tsp Turmeric Powder
2 tsp Garam Masala
1 tsp Chilly Powder
A pinch Asafoetida
Salt to taste
Fat

Method:

Wash and cut cauliflower into flowerettes. Heat fat and fry finely sliced onion to a golden brown. Add asafoetida and crushed ginger. Fry for a few minutes add cauliflower, salt, coriander and turmeric. Fry for few minutes. Cover and cook gently. Occasionally remove lid and stir to prevent burning. When the cauliflower is nearly done add chilli powder and garam masala. Add curds, a little at a time and keep on cooking till cauliflower is tender and moisture from curds evaporated.
