Potato Bhaji

Ingredients:

250gm Potatoes
100gm Onions
Coriander leaves
4 Green chilies
1 tsp Tamarind
1/4tsp Mustard seeds
A pinch Asafoetida
4 tsp Coconut oil
To taste Salt
Curry leaves

Method:

Wash, boil, peel and cut potatoes into cubes. Add tamarind pulp, green chilies and onions. Mix well. Heat oil in a pan. Fry mustard seeds, asafoetida and curry leaves. Remove pan from fire. Add prepared potatoes and salt. Mix well. Garnish with chopped coriander leaves.
