Panch Phoorner Charchari – Bengali

Ingredients:

250gm Potatoes
100gm Brinjals
100gm Red pumpkin
100gm Peas
4 Green chillies
5gm Onion seeds
1/2tsp Mustard seeds
1/2tsp Cumin
1/2tsp Fenugreek
1/2tsp Fennel
A spring Curry leaves
1 tsp Sugar
Oil
To taste Salt
2 Red chillies

Method:

1, Peel and cut potatoes and pumpkin into big cubes. Cut brinjals into even-sized pieces. Shell peas. 2, Heat oil. Fry red chillies broken into small pieces, and slit green chillies, mixed spices and enough water to cook vegetables. Cover. 4, Let it simmer till vegetables are tender and water is absorbed.
