Fried Tindli – Cucumber

Ingredients:

150gm Gherkins
½ tsp Mustard seeds
1 level tsp Chilly powder
¼ tsp Turmeric .
½ tsp Cumin powder
Salt to taste
½ tsp Sugar
Oil

Method:

Wash and drain gherkins. Cut lengthwise into 8 to 10 pieces. Heat oil. Add mustard seeds. When they crackle add gherkins and saute. Cover and cook over a slow fire (no water should be added) till tender. Stir now and then. Remove lid. Add salt, turmeric, cumin powder and chilly powder. Mix well. Cook for a further 5 minutes. Add sugar. Mix well and remove.
