Ingredients:
250gm Cheese
150gm Refined flour
4 Eggs
to taste Salt and pepper
50ml Oil for frying
Gravy:
50gm Onions
2 flakes Garlic
a small piece Ginger
¼ cup Tomato puree
1/2tsp Chilly powder
5 Dried plums
50gm Ghee
¼ tsp Turmeric
a few Coriander leaves
Method:
Cheese balls:
Sieve flour, salt and pepper. Add finely grated cheese. Beat egg yolks and add to dry ingredients. Mix well. Let the mixture stand for at least ½ hour. Heat oil. While oil is heating beat egg whites stiff and fold into the mixture lightly but thoroughly. Put teaspoonfuls of the mixture into the hot oil. Remove as they turn a light golden brown colour. Drain on paper.
N.B.
Do not allow to fry too long or else the cheese balls become tough.
Gravy:
Grind together onions, garlic, ginger, chilly powder and turmeric. Heat fat. Add ground spices. Add tomato puree, plums and a little water. Simmer for five minutes. Add fried cheese balls and simmer for another tow to three minutes. Serve hot garnished with chopped coriander leaves.
