Carrot Pachadi

Ingredients:

1 cup - Grated Carrot
1 - Chopped Onion
2 - Chopped Green Chilly
1 tsp - Grated Ginger
1/2 tsp - Mustard Seeds
1/2 tsp - Cumin Seeds
1/4 tsp - Turmeric Powder
1 tbsp - Ghee
salt - To taste
2 tsp - coriander leaves
2 tsp - Coconut
Pinch of Asafoetida
Small curry leaves

Method:

Heat pan ghee in a skillet.Add mustard seeds, cumin seeds,
asafoetida, curry leaves. Now add the chopped green chillis, grated ginger and onions. Fry for two minutes. Add turmeric powder and grated carrot,coconut and fry for five minutes.Stir constantly so that it doesnt burn. Remove from fire and cool.

Once its cool, add salt and coriander leaves and mix well.
