Brinjal Curry

Ingredients:

250 gms Brinjal
1 Onion
6 Red Chilly
3 Green Chilly
1/2 Piece Ginger
2 Flakes Garlic
1/2 Cup Coconut
1/4 tsp Turmeric Powder
1/2 tsp Pepper
1/4 tsp Mustard Seeds
Coriander Leaves
Salt to Taste

Method:

Wash and cut brinjals into long pieces. Grind smooth paste red chillies, turmeric,  pepper, salt, garlic and 15 onion. Apply mixture to brinjals and set aside for fifteen minutes. Wipe off masala from brinjals. Heat oil fry brinjals till skin shrinks remove to the same oil, add mustard seeds, sliced ginger, onion and green chillies fry well add masala removed from brinjals. Add second and third extract of coconut milk bring to boil. When liquid boils, quickly and brinjals. Leave pan uncovered and continue to boil briskly till gravy becomes thick. When gravy is thick, add first extract pf coconut milk and remove. Finally garnish with coriander leaves.

Serve along with Chappathi, Nan
