Ingredients:
500gm Ash gourd
Oil
200gm Onions
4Green chilies
1 tsp Lime juice
Coriander leaves
To taste Salt
Method:
Peel and cut gourd into cubes. Cook over a slow flame, adding just enough water to cook dry, till tender. Mash gourd. Heat oil. Add chopped onions and green chilies and sauté. Add gourd and salt and mix well. Fry for five minutes more. Remove pan from fire.
Add lime juice and chopped coriander leaves.
N.B. If desired, a little roasted cumin powder could be added, in which case add this before adding the lime juice.
